Try a Tex-Mex Breakfast

Hosts who believe that breakfast is the most important meal of the day will search for unique, delicious recipes to amaze their guests.  In any part of the country, serving Tex-Mex for breakfast will be a satisfying change for guests.  Tex-Mex is the combination of Mexican cuisine with a Texan twist.  A Tex-Mex meal is a hearty one.   Following are two breakfast recipes that are truly Tex-Mex.  The first is suitable for individual servings and the other works well for serving a dozen or more guests. 

 Huevos Mexicana

Quick View Ingredients:  butter, flour or corn tortillas, eggs, salt, refried beans, cheese, , salsa (recipe below)

1 tablespoon butter

1 package corn or flour tortillas

1 can refried beans

4 large eggs

½ cup shredded cheese

salsa

Preheat oven to lowest temperature.  In frying pan, melt butter in medium hot pan.   Add tortillas one at a time and cook each until bubbles appear.  Place cooked tortillas in oven proof dish in oven to keep warm.  Heat refried beans in separate pan.  Use the same frying pan from cooking the tortillas and fry eggs until crispy on bottom but still showing a soft yolk on top.

To serve:  Place room temperature salsa on bottom of each serving dish.  Add 2 fried eggs per platter. Smother with additional salsa.  Add heated refried beans to side.   Sprinkle cheese on top of beans.  Serve with warm tortillas. 

Breakfast Tacos

Quick view ingredients:  crock pot, bacon, potatoes, onion, Velveeta cheese, jalapeno peppers, fresh flour tortillas, salsa, serves 15 plus

1 pound bacon

5 pounds potatoes, peeled and cut into cubes

1 medium onion, cut up

1 pound of Velveeta cheese, sliced

¼ cup of sliced jalapeno peppers

2 packages of flour tortillas (usually 12 each)

Cook bacon in large skillet.  Remove bacon and drain grease leaving about ¼ cup of grease to cook potatoes.  Fry potatoes, covered, until slightly brown.  Add onion and jalapenos. Drain excess grease.  In separate bowl, add eggs and whisk until beaten.  Add eggs to potato mixture, scrambling until eggs are cooked.  Using a crock pot, layer potato/egg mixture, crumbled bacon and Velveeta cheese, starting with mixture on bottom and ending with cheese on top.  Do not place cheese on bottom of crock pot.  Cook until cheese melts.  Warm tortillas in oven at lowest heat.

To serve:   Place 2 tablespoons of layered mixture from crock pot into warm tortilla, add salsa, and then roll the tortilla up. This is an excellent brunch recipe and may be prepared ahead of time.

Tex-Mex Salsa

No true Tex-Mex meal would work without a flavorful tomato based salsa.  The following recipe uses cilantro and jalapeno peppers which may be increased or decreased according to taste.

Quick view ingredients:  blender, tomato sauce or diced tomatoes, cilantro, garlic, salt,  jar of sliced jalapeno peppers

16 ounce can of tomato sauce or diced tomatoes

½ bunch of fresh cilantro – stems removed (more to taste)

1 teaspoon garlic salt

½  cup of sliced jalapeno peppers (more to taste)

Put all ingredients in blender and mix for 2 minutes.  That’s it!

Each Tex-Mex breakfast recipe above will amaze your guests.  The south of the border flavors of the Huevos Mexicana and the Breakfast Tacos will have them shouting “Ole!”  Be prepared to share these recipes.  Buen apetito!
